Tombé and Thierry Breton prepare bread, in the basement of one of Thierry's restaurants. "The apprenticeship is very long in bakery but then, a well-trained apprentice can replace a boss”, says the chef. Thierry Breton proudly speaks about ten of his former apprentices have themselves become chiefs and established restaurant owners over the last 25 years. He hopes that Tombé’s fate would follow a similar path.
